鑄鐵鍋 My cast iron cookware collections

I started to use cast iron cookware to cook since I moved to the States in 2018 spring and have been cooking with these pots pretty often. I bought all the Le Creuset oven pots at outlet, Outlet did not have too many choices of colors, so I just chose the colors available. I bought Cuisinart and Staub oven pots at HomeGoods or online.
The most famous French cast iron cookware brands are Le Creuset and Staub; American brands are like Cuisinart and Lodge, etc. If you don't have concern about the brand, actually they are all pretty good.
Here are my experiences of cooking with cast iron oven pots, hope it helps. My first pot was Le Creseut Round Dutch Oven 24, but If you never buy cast iron pot before, I would suggest you to buy Le Creuset Chefs Oven 22 or 26 as your first pot. With Chefs oven, you can cook soup, and perfect for sauté and then stew, good for cooking curry or beef bourguignon, which need to sauté first.
鑄鐵鍋導熱迅速且均勻, 厚實的鍋壁能維持整鍋溫度, 厚重的蓋子使蒸氣不易流失, 鎖住食物的美味與營養。鑄鐵鍋最強的功能就是燉煮, 尤其需要花時間的燉肉。但琺瑯鑄鐵鍋容易龜裂, 燉煮時要盡量用中小火到中火烹調, 避免開大火直火烹調。

- Staub
Staub 鍋蓋有汲水釘, 保水功能比 Le Creuset 佳。
Staub 內部沒有鍍珐瑯, 使用前須先開鍋。
新鍋用溫水稍微洗過後, 注入約八分滿的水, 開中火煮滾, 水滾後倒掉鍋內的水, 鍋子降溫後再用溫水洗一次。然後把鍋子擦乾, 放回爐上, 用最小火加熱, 鍋子微溫時, 倒入少許蔬菜油, 用廚房紙巾抹勻, 繼續小火加熱到由被鍋子吸進去即可。
平常使用時, 除非很油, 否則用溫熱水洗去鍋子表面的髒污即可。
